Salsa besciamella

Una delle preparazioni di base nella cucina è proprio la besciamella, una salsa al latte, che è indispensabile per la preparazione di molti piatti italiani. La besciamella, chiamata balsamella dagli Artusi, o bechamèl dai Francesi, ha origini toscane ed è stata importata in Francia da Caterina de' Medici, che trasferì parte della sua tradizione culinaria toscana nel matrimonio francese con Enrico II. Per preparare una buona besciamella sono necessari latte, burro, farina e un tocco di noce moscata, ma esistono varianti vegetali, sostituendo alla quantità di latte il brodo o un latte vegetale e al burro margarina o olio extravergine d'oliva. Vediamo come procedere:

Ingredienti:

  • 500 ml latte ad alta digeribilità con lattosio inferiore allo 0,01%

  • 50 g burro ad alta digeribilità con lattosio inferiore allo 0,01%

  • 50 g farina

  • noce moscata

  • un pizzico di sale


Preparare la base mettendo al fuoco il burro e alla farina; fate fondere lentamente il burro continuando a mescolare, quando si sarà formata una salsa morbida spegnete il fuoco e aggiungete la noce moscata, il sale ed il latte a filo. Continuando a mescolare ponete ancora su fuoco basso e lasciate cuocere fino a che non comincerà a velare il cucchiaio. Più cuoce e più diventerà soda. Secondo la ricetta che seguirete avrete bisogno di una besciamella più o meno consistente; se si presentasse troppo densa, potete allungare con un pò di latte, viceversa se fosse troppo liquida, potete preparare un fondo con un pò di farina e burro come avete fatto per iniziare e aggiungerlo alla besciamella mescolando bene con una frusta e rimettendola per un minuto o due sul fuoco.

According to the recipe you are going to use your white sause with, you'll need to follow a more or less consistent sauce; if it occurred too thick, you can thin with a little milk, otherwise if it is too liquid, you can prepare a fund with a little flour and butter as you did to start it and add it to the sauce, stirring well with a whisk.
